Braised Prime Ribs and Eggplants in Black Bean Paste
Ingredients: 300g prime ribs, 240g eggplants, 1 shallot (sliced), 1 stalk spring onion (sectioned). 1 tbsp black
bean paste (1tbsp water)
Marinade: 1/2 tbsp light soy sauce, 1 tbsp rice wine.
Seasoning: 3/4 cup water, 2 tsp sugar, 1/2 tbsp light soy sauce, a dash of sesame oil, a pinch of pepper
Method:
1. Rinse and chop prime ribs into chunks, marinade well then deep fry briefly with plenty of oil. Remove for later use.
2. Trim and rinse eggplants, drain, cut into chunks then deep fry briefly.
3. Heat 2 tbsp oil to saute shallot slices, spring onion sections and black bean paste, add in prime ribs, sprinkle wine and pour in seasoning. Bring ingredients to boil, lower heat to simmer til tender, then add in eggplant and braise till ingredients done and sauce thicken. Dish up and serve.
